This is another dish I’ve wanted to try making for a while. It always seemed like it had good potential- I love grits for breakfast and who doesn’t love breakfast foods for dinner (brinner!) As an added plus, it was a lot easier to make than I had imagined and it was absolutely delicious. Absolutely delicious. Grits are great on their own- warm, cheesy, hearty- but the added shrimp and vegetables brought a new element that was just fantastic. I’ll definitely be making this again.
Ingredients:
1/2 c. grits
1 c. water
1 c. milk
2 T. shredded cheddar
1/2 t. olive oil
1/2 onion
2 cloves garlic
3 slices ham or Canadian bacon, finely diced
1/2 c. small shrimp
Bring water and milk to a boil then add grits and cook for about 6 minutes on medium heat, stirring regularly. Meanwhile heat 1/2 t. olive oil in a frying pan and add finely diced garlic, onion, and ham and cook for a few minutes until onions are soft and ham is lightly browned. Stir in shrimp and cook for another minute or so (I chose to also add some spinach), then remove from heat and stir into the prepared grits. Top with extra shredded cheddar and (optional) red pepper flakes.
